1 x packet Fry’s Vegetarian Golden Crumbed Schnitzels
1 ½ cup x Rice, cooked (brown or white)
2 x Onions, diced
1 tsp x Ginger, crushed
1 tsp x Garlic, crushed
4 tsp x Green curry paste
2 tins x Coconut milk or coconut cream
2 tbs x Peanut butter
½ x Red pepper, diced
½ x Green pepper, diced
¼ x Pineapple, diced
1 x Celery stick, chopped
1 tsp x Chinese 5 spice mix
1 tsp x Sugar
¼ cup x roasted peanuts
Grill Fry’s Vegetarian Golden Crumbed Schnitzels according to instructions. Cut into bit sized pieces.
Sauté onions in ginger and garlic until lightly browned. Add curry paste and coconut milk/cream. Allow to simmer for 10 mins. Stir in the peanut butter, peanuts and sugar. Mix well and allow to simmer for a further 5 mins. Lastly add the Schnitzels.
In another pan, sauté red and green peppers, pineapple and celery until tender. Add to cooked rice, followed by the Chinese 5 spice. Mix well until all combined.
To serve, place the Schnitzel curry mixture on top of a bed of the prepared rice.
